Clean Food Prep ~ Week Three

Before I jump into this week’s menu I wanted to give a shout out to three blogs that have made the biggest difference in enabling me to transition to this clean eating lifestyle…

I subscribe to all three of these blogs and look forward to getting all of their new recipes and tips!  And now on to some of the food from this week’s eating clean food prep…

#1 – Clean Comfort Lasagna – I know that it probably seems impossible to create a lasagna that is clean, but not only is this lasagna clean but it was out of this world good!  Biggest difference from “regular” lasagna?  Instead of pasta noodles, you use thinly sliced zucchini as the noodles!  As you can probably see in the picture, the lasagna does end up pretty runny so it is best served with a slotted spoon.

#2 Turkey Meatloaf Muffins – I have to admit that as I was making these it seemed like there was way too much seasoning called for in the recipe so I scaled back and didn’t use quite as much.  Lesson learned!  Until I get a handle on this whole clean eating thing I’m just going to stick with the recipes I find and not try to make my own changes!  Check back with me in a couple of months and I might start making modifications and trying my own thing ;)
